稻米脂类的功能特性及其生物调控

Abstract: Lipid is an important nutritional component of rice, and has significant effect on rice quality. To furtherly elucidate the nutritional and functional characters of lipids, and dig out related QTLs for lipid in rice, the distributions, types and components of lipids in rice grain were summarized. Also, the functional characteristics i.e. the roles of lipids on rice development and rice quality and biological regulation of rice lipid were reviewed. It will provide useful information for the improvement of rice quality.

摘要: 脂类是稻米的重要营养组分之一,对稻米品质有重要影响。为进一步阐明稻米脂类的营养价值、功能特性及脂肪含量相关QTL的定位。本文对稻米脂类的分布,种类及组成、脂类对水稻生长发育,稻米品质的功能特性及稻米脂类的生物调控研究进展进行了概述,以期为脂类相关稻米品质改良育种奠定一定的理论基础。
